Pork Souvlaki Pita

Ingredients

Servings
  • 180 g raw Pork loin (6.3 oz raw)
  • 15 g Lemon juice (1 tbsp)
  • 8 g Olive oil (⅔ tbsp)
  • 5 g raw (1½ cloves) Garlic
  • 1 g Dried oregano (1 tsp)
  • 1.2 g Salt (¼ tsp)
  • 0.4 g Black pepper (⅛ tsp)
  • 100 g Nonfat Greek yogurt (½ cup)
  • 80 g raw Cucumber (2.8 oz raw)
  • 2 g raw Fresh dill (¼ cup chopped)
  • 80 g raw Tomato (2.8 oz raw)
  • 30 g raw Red onion (1.1 oz raw)
  • 70 g (1 large pita) Whole-wheat pita

You'll need: Bowl, Skewers or a heavy frying pan, Grater, Small bowl, Cutting board and knife.

Method

  1. Marinate the pork

Cut the pork into 2.5 cm (1 inch) cubes. Then scrub the board, knife and your hands with soap before you touch anything else. Toss them in the bowl with most of the lemon juice, the olive oil, half the garlic (grated), the oregano, most of the salt and the pepper. Leave for 10 minutes.

Lemon works fast on pork. Longer than an hour and the outside turns chalky.

  2. Make the tzatziki and salad

Grate half the cucumber, squeeze out the water and stir it into the yogurt with the rest of the garlic (grated), the dill, a squeeze of lemon and a pinch of salt. Slice the tomato, the red onion and the rest of the cucumber for the salad.

Squeezing the grated cucumber dry keeps the sauce thick.

  3. Sear the pork

Thread the pork onto skewers, or cook the cubes loose. Sear in a hot dry pan (or on an outdoor grill) over medium-high heat for 8–10 minutes, turning every 2 minutes, until browned all over and 63°C (145°F) or more in the middle.

Loin dries out fast. Pull it as soon as it hits 63°C (145°F) and the juices run clear.

  4. Warm the pita and wrap

Warm the pita in a dry pan for about 30 seconds a side. Spread on a generous layer of tzatziki, add the pork, tomato, onion and cucumber, and fold it up.

Wrap the bottom half in paper or foil so the juices stay in your hand, not on your lap.

Common mistake

Overcooking the pork. Small cubes go from juicy to dry in about 2 minutes.

Storage

Marinated raw pork keeps 1 day in the fridge. Cooked pork and tzatziki keep 2 days; assemble fresh.
