Amounts are for 2 servings. Calories and macros above stay per serving, and amounts in the method are for 1 serving.
You'll need: Baking sheet, Parchment paper, Bowl, Frying pan, Spatula, Cutting board and knife.
Method
-
Season the potatoes
Heat the oven to 220°C (425°F) and line the baking sheet with parchment paper. Cut the potato into 2 cm (¾ inch) cubes. Toss them in the bowl with half the oil, the paprika, the garlic powder and half the salt, then spread them out on the sheet so they don't touch.
Dry the cubes with a clean towel first. Wet potatoes steam instead of crisping.
-
Roast the potatoes
Roast the potatoes for 25–30 minutes, turning them once halfway, until golden and crisp at the edges. Start the chicken when they have about 10 minutes left.
Push a fork into the biggest cube. It should slide in with no resistance.
-
Cook the chicken
Cut the chicken into 2 cm (¾ inch) pieces and season with the pepper and the rest of the salt. Then scrub the board, knife and your hands with soap before you touch anything else. Heat the rest of the oil in the frying pan over medium-high heat and cook the chicken for 6–8 minutes, turning, until golden and 74°C (165°F) inside.
Cut one of the biggest pieces open. No pink and clear juices means it's done.
-
Build the bowl and drizzle with ranch
Shred the romaine, chop the pickles and finely slice the red onion. Put the lettuce in a bowl, add the hot potatoes and chicken, then the pickles and onion. Drizzle with the ranch.
Spoon on a little pickle brine with the ranch for a tangier dressing.
Common mistake
Dressing the bowl before it's time to eat. The lettuce wilts and the potatoes go soft.
Storage
Fridge for up to 3 days, with the hot and cold parts in separate containers. Reheat the potatoes in the oven or air fryer to bring back the crunch.
Meal prep
Keeps 3 days. Store the chicken and potatoes apart from the lettuce, pickles and ranch.
