You'll need: Air fryer (or oven and baking sheet), Plastic wrap, Rolling pin or small pan, 2 shallow bowls, Small saucepan, Brush or spoon.
Method
-
Flatten and marinate
Cover the chicken with plastic wrap and pound it to an even 2 cm (¾ inch) thick. Stir the yogurt and hot sauce together and coat the chicken. Leave it while the air fryer heats.
Even thickness means the thin end doesn't dry out before the thick end is done.
-
Bread the chicken
Heat the air fryer to 200°C (400°F). Put the flour in one bowl and mix the breadcrumbs with the paprika, garlic powder and salt in the other. Dredge the chicken lightly in flour, then press it firmly into the crumbs on both sides.
The yogurt coat is the glue. Press until no wet spots show.
-
Air-fry the chicken
Spray the chicken with the oil and air-fry for 10–12 minutes, flipping halfway, until golden and crisp and 74°C (165°F) in the middle. No air fryer? Heat the oven to 220°C (425°F) at the start and bake on a lined baking sheet instead, turning halfway; each batch takes about 5 minutes longer.
Spray the top again at the flip for an even golden color.
-
Warm the hot honey
Warm the honey with the cayenne in the small saucepan over low heat for about 1 minute, just until runny.
Don't boil it. Boiled honey turns bitter.
-
Build the sandwich
Toss the cabbage with the mayonnaise and lemon juice. Toast the bun if you like, lay the chicken on it, brush with the hot honey and top with the pickles, the slaw and the top bun.
Brush the honey on at the end so the crust stays crisp.
Common mistake
Dousing the chicken in honey too early. The crust goes soft; brush it on right before eating.
Storage
Best fresh. Cooked chicken keeps 2 days in the fridge; re-crisp in the air fryer for 4 minutes.
