Ingredients
- 130 g raw Skinless chicken breast (4.6 oz raw)
- 10 g Lemon juice (⅔ tbsp)
- 0.5 g Dried oregano (½ tsp)
- 4 g raw (1½ cloves) Garlic
- 3 g Olive oil (⅔ tsp)
- 60 g Nonfat Greek yogurt (¼ cup)
- 40 g raw Cucumber (1.4 oz raw)
- 1 g raw Fresh dill (1¾ tbsp chopped)
- 0.8 g Salt (⅛ tsp)
- 0.3 g Black pepper (⅛ tsp)
Amounts are for 2 servings. Calories and macros above stay per serving, and amounts in the method are for 1 serving.
You'll need: 1–2 skewers (soak wooden ones in water for 10 minutes), Grill pan, heavy frying pan or broiler, Grater, 2 small bowls, Knife, Cutting board, Meat thermometer (helpful).
Method
-
Marinate the chicken
Cut the chicken into 2.5 cm (1 inch) cubes. Grate or finely chop the garlic. In a bowl, mix the chicken with half the lemon juice, the oregano, half the garlic, the oil, a pinch of the salt and the pepper. Leave it for 10 minutes, or cover and keep it in the fridge for up to a day.
Wash your hands, knife and board in hot soapy water after touching raw chicken, before you handle anything else.
-
Make the tzatziki
Grate the cucumber, then squeeze it hard in your hand over the sink to get the water out. Stir it into the yogurt with the rest of the garlic and lemon juice, the chopped dill and the rest of the salt.
Squeeze the cucumber well. If you skip this, the tzatziki turns thin and watery.
-
Grill the skewer
Thread the chicken onto the skewer, leaving a small gap between pieces. Cook it in a hot grill pan or under the broiler for 8–10 minutes, turning every 2 minutes, until it's browned on all sides and the thickest piece reaches 74°C (165°F). Cut one open if you have no thermometer: it should be white all the way through.
Small gaps between the pieces let the heat reach every side, so the chicken cooks evenly.
-
Rest and dip
Let the skewer rest for 2 minutes, then eat it with the tzatziki for dipping.
Resting keeps the juices in the chicken instead of on the plate.
Common mistake
Cutting the chicken into uneven pieces. The small ones dry out while the big ones are still raw in the middle.
Storage
Keep the cooked chicken and the tzatziki in separate containers in the fridge for up to 3 days. The chicken is good cold.
Meal prep
Grill four skewers at once and keep a tub of tzatziki in the fridge. That's four snacks ready to grab.
Swaps
- Chicken breast → Pork tenderloinThe classic souvlaki meat in Greece, and just as lean.
- Fresh dill → Fresh mintGives the tzatziki a cooler, fresher taste.
