Tuna Poke Nachos

Ingredients

Servings
  • 70 g (about 9 wrappers) Wonton wrappers
  • 4 g Olive oil (1 tsp)
  • 160 g raw Sushi-grade tuna, cubed (5.6 oz raw)
  • 14 g Soy sauce (¾ tbsp)
  • 4 g Toasted sesame oil (1 tsp)
  • 6 g Rice vinegar (1¼ tsp)
  • 3 g raw Fresh ginger (0.1 oz raw)
  • 12 g raw (1 scallion) Scallions
  • 15 g Light mayonnaise (1 tbsp)
  • 6 g Sriracha or hot sauce (0.2 oz)
  • 60 g raw Avocado (2.1 oz raw)
  • 60 g raw Cucumber (2.1 oz raw)
  • 50 g Shelled edamame, thawed (1.8 oz)
  • 4 g Sesame seeds (1⅓ tsp)

You'll need: Baking sheet, Parchment paper, Pastry brush, Two bowls, Sharp knife.

Method

  1. Bake the wonton chips

Heat the oven to 190°C (375°F). Cut each wonton wrapper into 4 triangles, spread them on a parchment-lined sheet and brush lightly with the olive oil. Bake 5–6 minutes, until golden and crisp.

Spread them in one layer. Overlapping chips stay soft in the middle.

  2. Marinate the tuna

Keep the tuna cold until the last minute. Cut it into 1 cm (½ inch) cubes with a sharp knife. Fold them gently in a bowl with the soy sauce, sesame oil, rice vinegar, grated ginger and half the sliced scallions. Chill 5 minutes. Eat raw tuna the same day and buy only fish sold as sushi-grade.

Don't marinate longer than 10 minutes. The acid starts to turn the tuna firm and pale.

  3. Make the spicy mayo and toppings

Stir the mayonnaise with the hot sauce. Dice the avocado and cucumber and thaw the edamame under cool running water for a minute.

Add a few drops of water to the mayo if you want to drizzle it from a spoon.

  4. Pile onto the chips

Pile the chips on a plate. Spoon the tuna and its juices over the top, add the avocado, cucumber and edamame, drizzle with the spicy mayo and scatter with the sesame seeds and the remaining scallions. Eat straight away.

Assemble just before eating. The chips go soft in about 10 minutes.

Common mistake

Assembling too early. The chips absorb the marinade and go soggy within minutes.

Storage

Eat straight away. Raw tuna doesn't keep: finish it the same day. Leftover chips keep a day airtight.
