Birthday Cake Protein Bowl

Ingredients

Servings
  • 80 g raw Strawberries (2.8 oz raw)
  • 200 g Nonfat Greek yogurt (1 cup)
  • 25 g Vanilla whey protein powder (0.9 oz (about ¾ scoop))
  • 3 g Vanilla extract (¾ tsp)
  • 12 g Rainbow sprinkles (0.4 oz)

You'll need: Mixing bowl, Whisk, Spatula, Serving bowl, Cutting board and knife.

Method

  1. Dice the strawberries

Hull the strawberries and dice them into small cubes. Set a few aside for the top.

Pat the diced strawberries dry with paper towel so they don't leave pink streaks in the cream.

  2. Whisk and fold

Whisk the yogurt, whey and vanilla in the mixing bowl for about 60 seconds, until smooth and thick like frosting. Fold in half the sprinkles and most of the strawberries with the spatula, using only a few turns.

Fold for as short a time as possible. Sprinkles bleed color if you keep stirring.

  3. Chill and decorate

Spoon the mixture into the serving bowl and chill it for 20 minutes, until it's thick and cold. Scatter the rest of the sprinkles and the strawberries you set aside over the top.

Add the last sprinkles right before eating. They stay bright and crunchy.

Common mistake

Stirring the sprinkles in for too long. The colors bleed and the bowl turns a muddy gray-pink.

Storage

Covered in the fridge for up to 2 days. The sprinkles bleed over time, so add the topping when you eat it.

Swaps

  • Strawberries → RaspberriesTangier, and they cut through the sweet frosting taste.
  • Rainbow sprinkles → Mini chocolate chipsChocolatey rather than colorful. Use the same weight.
