Ingredients
- 120 g raw Apple (4.2 oz raw)
- 200 g Nonfat Greek yogurt (1 cup)
- 25 g Whey protein powder (0.9 oz (about ¾ scoop))
- 10 g Unsweetened cocoa powder (1¾ tbsp)
- 0.5 g Ground cinnamon (¼ tsp)
- 120 g 2% cottage cheese (4.2 oz)
Amounts are for 2 servings. Calories and macros above stay per serving, and amounts in the method are for 1 serving.
You'll need: Mixing bowl, Whisk, Spatula, Serving bowl, Cutting board and knife.
Method
-
Dice the apple
Core the apple and cut it into small cubes, leaving the skin on. Set a third of the cubes aside for the top.
Keep the skin on. It adds color and crunch, and the apple stays firm for longer.
-
Whisk the chocolate cream
Whisk the yogurt, whey, cocoa and cinnamon in the mixing bowl for about a minute, until smooth with no streaks. Fold in the cottage cheese and the larger share of the apple with the spatula, a few turns only, so the curds stay whole.
Whisk the cocoa cream completely smooth before the cottage cheese goes in. Lumps of cocoa won't break up afterward.
-
Chill and top
Spoon the mixture into the serving bowl and chill for 30 minutes, until cold and a little firmer. Scatter the rest of the apple over the top just before you eat.
Add the last of the apple at the end so some of it is still crisp, not soft from sitting in the cream.
Common mistake
Stirring the cottage cheese in hard. The curds break down and the bowl turns into grainy mush.
Storage
Covered in the fridge for up to 2 days. Keep the extra apple separate until you eat.
