You'll need: Air fryer (or oven and baking sheet), Bowl, Frying pan, Spatula, Small bowl, Cutting board and knife.
Method
-
Cut and season the fries
Heat the air fryer to 200°C (400°F). Cut the potato into fries about 1 cm (½ inch) thick, pat them dry with a clean towel and toss them in the bowl with the oil, paprika and half the salt.
Fries of the same thickness finish together. Cut them as evenly as you can.
-
Air-fry the fries
Air-fry the fries for 18–22 minutes, shaking the basket every 6 minutes or so, until golden and crisp. Cook them in two rounds if they don't fit in a single layer. No air fryer? Heat the oven to 220°C (425°F) at the start and bake on a lined baking sheet instead, turning halfway; each batch takes about 5 minutes longer.
Start the beef when the fries have about 8 minutes left, so everything is hot together.
-
Brown the beef
Heat the frying pan over medium-high heat. Add the beef with the pepper and the rest of the salt, break it up and cook for 7–9 minutes, until browned with no pink left and 71°C (160°F). Take the pan off the heat and scatter the cheddar over the beef so it melts.
Leave the beef alone for the first 2 minutes. It browns instead of turning gray.
-
Make the burger sauce and load the fries
Chop the pickles, shred the romaine and finely dice the red onion. In the small bowl, stir the yogurt and mustard with a spoonful of the chopped pickles. Pile the hot fries on a plate, top with the cheesy beef, the lettuce, onion and the rest of the pickles, and spoon the sauce over the top.
Add the lettuce after the beef has rested for a minute. Straight from the pan, it wilts at once.
Common mistake
Overcrowding the air fryer basket. The fries steam and come out soft instead of crisp.
Storage
Best fresh. Leftover beef keeps 3 days in the fridge; reheat the fries in the air fryer for 4–5 minutes at 200°C (400°F).
Meal prep
Keeps 2 days, but the fries soften. Store the beef and the fries apart from the toppings and sauce, and re-crisp the fries in the air fryer.
