Burger Bowl with Special Sauce

Ingredients

Servings
  • 160 g raw Lean ground beef (90%) (5.6 oz raw)
  • 220 g raw Potato (7.8 oz raw)
  • 5 g Olive oil (1 tsp)
  • 1 g Paprika (½ tsp)
  • 1 g Salt (⅛ tsp)
  • 0.3 g Black pepper (⅛ tsp)
  • 80 g raw Iceberg lettuce (2.8 oz raw)
  • 60 g raw Tomato (2.1 oz raw)
  • 45 g drained Dill pickles (1.6 oz drained)
  • 25 g raw Red onion (0.9 oz raw)
  • 20 g Light ranch dressing (0.7 oz)
  • 8 g Yellow mustard (½ tbsp)
  • 10 g Ketchup (⅔ tbsp)
  • 25 g Reduced-fat cheddar, grated (0.9 oz)

You'll need: Baking sheet or air fryer, Parchment paper, Frying pan, Spatula, Small bowl, Cutting board and knife.

Method

  1. Season the potato

Heat the oven to 220°C (425°F) and line a baking sheet with parchment paper. Cut the potato into 2 cm (¾ inch) cubes. Toss them on the sheet with the oil, paprika and half the salt, then spread them out so they don't touch.

Space between the cubes is what makes them crisp. Crowded potatoes steam instead.

  2. Roast the potatoes

Roast the potatoes for 22–28 minutes, turning them once halfway, until golden and crisp at the edges. In an air fryer, cook them at 200°C (400°F) for 15–18 minutes, shaking the basket twice.

Push a fork into the biggest cube. If it slides in with no resistance, they're done.

  3. Brown the beef

While the potatoes roast, thinly slice the red onion and heat the frying pan over medium-high heat. Add the beef and onion with the rest of the salt and the pepper. Break it up with the spatula and cook for 6–8 minutes, until browned all over with no pink left. It should read 71°C (160°F) on a thermometer.

Leave the beef alone for the first 2 minutes so it browns. Stirring too early makes it gray.

  4. Make the sauce and build the bowl

Finely chop the pickles and dice the tomato. For the special sauce, stir the ranch, ketchup and mustard together with a spoonful of the chopped pickles. Shred the iceberg into a bowl. Add the potatoes and the beef with its onions, then the cheddar, tomato and the rest of the pickles, and spoon the sauce over the top.

Let the beef sit off the heat for a minute before it goes on the lettuce, so the lettuce stays crunchy.

Common mistake

Putting the lettuce in while the beef is still sizzling. It wilts in seconds and the bowl loses its crunch.

Storage

Fridge for up to 3 days, with the hot and cold parts in separate containers. Reheat the beef and potatoes until steaming, then add the cold toppings.

Meal prep

Keeps 3 days in the fridge if you store the beef and potatoes apart from the lettuce, pickles and sauce.
