Method
-
Stir the BBQ sauce
In the small bowl, stir the tomato sauce, honey, mustard and cider vinegar until smooth. Taste it; it should be sweet, tangy and a little smoky from the mustard.
Make the sauce first. It thickens a little as it sits.
-
Shape the patties
Mix the turkey with the paprika, garlic powder, salt and pepper in the mixing bowl, just until combined. Shape into 2 patties about 2 cm (¾ inch) thick, pressing a small dimple into the middle of each.
The dimple keeps the patties flat as they cook, so they don't puff up like a ball.
-
Cook the patties and melt the cheddar
Heat the oil in the frying pan over medium-high heat. Cook the patties for 5–6 minutes on each side, until browned and 74°C (165°F) in the middle. Scatter the cheddar on top, cover the pan and cook for 1 minute, until melted.
Press only once, right when the patties go in. Pressing later squeezes out the juices.
-
Build the bowl
Chop the romaine, cabbage, tomato and red onion into a bowl. Slice the patties and lay them on top, then drizzle with the BBQ sauce and the ranch.
Let the patties rest for 2 minutes before slicing so the juices stay inside.
Common mistake
Overworking the meat. Mixing too long makes lean turkey dense and dry.
Storage
Fridge for up to 3 days. Reheat the patties until steaming and keep the dressings and greens cold.
Meal prep
Keeps 3 days with the salad, patties and sauces in separate containers.
